Grilled Oysters

A perfect treat for New Years Eve, or any special night!

Grilled Oysters Grilled Oysters

Watch pitmaster Daniel demonstrate how to prepare grilled oysters for the holidays.

Ingredients

  • 5 lbs fresh oysters
  • 2 lbs butter
  • 2 tbsp fresh tarragon, minced 
  • 4 to 5 tbsp Truffle Hot Sauce
  • 1 tsp freshly ground black pepper
  • 1/2 cup grated parmesan cheese

Preparation

Prep the Grill

Prepare your grill for direct - high heat BBQ.

Make the tarragon Butter

Place a heatproof pan or small cast-iron skillet over the heat.  

Melt butter with the tarragon, swirling to not burn any butter.

Add the hot sauce, salt, and pepper whisking until blended.
Set the butter to the cooler side of the grill

Grill the Oysters:
Place the oysters on the hot grill, flat-side up. 

Cover the grill and cook until the oysters open, about 5 minutes. 

Using tongs, transfer the oysters to a platter, trying to keep the liquor inside. 

Quickly remove the top shells and loosen the oysters from the bottom shells. 

Top each oyster with a scoop of butter mixture and cheese and return the oysters to the grill. 

Cook until the cheese is mostly melted and the oysters are hot, about 1 minute. 

Serve right away.
