A crowd pleaser with big flavors. Watch Pitmaster Daniel demonstrate how to smoke ham for the holidays.
Ingredients:
- 10-12 lbs bone-in Ham, pre-cooked
- Jack Daniel's® Whiskey
- Maple Syrup
- 1/2 cup Jack Daniel's® Pork Rub, plus 1 tsp, divided
- Jack Daniel's Whiskey® Barrel Smoking Chips
PREPARATION:
Prep Smoker:
Prep the smoker for indirect heat
Score Ham:
Carefully run a knife through the fatty side of the ham, slicing diagonal lines just through the fat, creating a criss-cross direction.
Transfer the ham to a small baking sheet of aluminum pan.
Season the Pork:
Sprinkle Jack Daniel's® Pork Rub liberally over the ham.
Make the Glaze:
Whisk the maple syrup and Jack Daniel's® together in a small heat-proof pot. Add the remaining 1 tsp Jack Daniel's® Pork Rub.
Place over the cooler side of the grill and allow to reduce, mixing occasionally.
Smoke the Ham:
Smoke the ham for about 3 hours, basting every 15 to 20 minutes with the juices that render from the pork. The ham is already cooked, you are just adding flavor and re-heating to serve.
For the last hour, baste with the maple glaze.
Serve:
Remove the ham from the grill, cover and rest 20 minutes.
Slice and serve, brushing with additional maple glaze as desired.
