PROSCIUTTO-WRAPPED SHRIMP WITH MANGO SALSA

Fire up the pellet grill to smoke and grill this delicious shrimp and prosciutto appetizer.

ingredients:

  • 2 Pounds shrimp, peeled and deveined 41/50 or larger
  • 1/2 cup Cowboy Range style bbq sauce
  • 8 Slices prosciutto, kept cold
  • Toothpicks
  • mango salsa
  • cilantro

PREPARATION:


  1. Arrange the bacon in a single layer on a wire rack.
    Rinse the shrimp under cold running water and dry thoroughly on paper towels. 
  2. Arrange shrimp on a single layer on a wire rack. 
  3. Brush with Cowboy Range Style BBQ sauce
  4. Spiral a piece of prosciutto around each shrimp, and secure with a toothpick. 
  5. When ready to cook, use Cowboy Charcoal & Apple Barbeque Pellets and set temperature on pellet grill to 400F and preheat, lid closed for 15 minutes. 
  6. Place the wire rack with the shrimp on the grill and cook for 10 to 15 minutes until the shrimp are cooked through, flipping once halfway through and rotating the shrimp if needed to avoid hot spots on the grill. 
  7. Remove the shrimp from the grill, carefully remove the toothpicks, and transfer to a serving platter.
  8. Serve the shrimp warm topped with mango salsa and fresh cilantro.
