Grilled Pineapple Salsa

Grilled Pineapple Salsa

Check out this delicious Grilled Pineapple Salsa, especially perfect to top off fresh fish, like Mahi Mahi. 

Ingredients

  • 1/2 pineapple, cored and cut into rings
  • 1 red onion, diced thick
  • 1/2 avocado, diced
  • 1 lime
  • 2/3 cup mint, chopped
  • Olive oil
  • Salt, to taste
  • 1 jalapeño, optional for added spice

Preparation

  • Light Cowboy Hardwood Lump Charcoal in a charcoal chimney and let burn for 10-15 minutes
  • Spread hot coals over grilling area and preheat grill for approximately 10 minutes
  • Drizzle pineapple, onion slices and jalapeño with olive oil
  • Place on grill for about 10 minutes, flipping in between
  • After the pineapple, onion and pepper begin to char, remove from grill and transfer to cutting board. Let cool before cutting them all into chunks to create the salsa
  • Add in diced avocado and chopped mint. Squeeze juice from the lime and add salt to taste
  • Serve on top of grilled Mahi Mahi or other desired fish. Enjoy!
