Smoked Squash

These bold flavors come to life in the smoke.

Ingredients

Western BBQ Products® Pecan Wood Chips

2 Hard squash cut in half with seeds removed

Olive Oil

¼ Cup Brown Sugar

Greek Yogurt (optional)

Dried Cranberries (optional)

Toasted Pecans (optional)

Preparation

  1. Light your grill according to the instructions.
  2. Cut squash in half lengthwise and remove seeds
  3. Brush inside with olive oil
  4. Sprinkle generously with brown sugar.
  5. Place 2 handfuls of wood chips directly on coals, in a smoker box on a gas grill or in a foil pouch directly over the main source of heat and wait for about 5 minutes until the chips begin to smoke.
  6. Place squash directly on the grill over medium heat and smoke for about 90 minutes or until tender.
  7. Transfer to serving platter and garnish with a drizzle of greek yogurt, dried cranberries and toasted pecans.
