Cowboy Grilled Beef Wellington Bites
For the Beef:
1 lbs Filet mignon, cut into 1-inch cubes,
1/3 cup mushroom base, or mushroom gravy mix
1 Puff pastry, thawed but kept chilled
1 tbsp olive oil
For the Sauce:
1 cup of sour cream
1 tbsp of Worcestershire sauce
1 tbsp prepared horseradish sauce more or less to your taste.
Preheat grill to medium-high heat and place a pizza stone over the heat.
Toss the cubed beef in the mushroom base and set aside.
Meanwhile, cut the chilled cool puff pastry into even squares.
Place one piece of beef inside of each square and fold up the edges and pinch tightly shut to form a little purse.
