Hot Lovin’ Grilled Bacon- Wrapped Filet Mignon

Turn up the heat this Valentine’s Day by grilling a delicious and romantic meal for two. Our recipe for Bacon-Wrapped Filet Mignon requires little prep paired with high heat, and the result is a juicy and tender main course that is sure to impress your Valentine.

 Hot Lovin’ Grilled Bacon- Wrapped Filet Mignon

When grilling filet mignon, remember that less is more. Simply season with salt and pepper, and wrap with bacon for a decadent and delicious pairing.

Ingredients

  • 2 beef filets mignons, 6-8 oz.
  • 2 slices bacon
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground pepper

Preparation

  • Fill grill with Cowboy Hardwood Lump Charcoal and light
  • Allow filets to sit at room temperature for 30 minutes before grilling
  • Wrap 1 slice of bacon around each filet tightly, securing in place with a toothpick
  • Brush olive oil on both sides of filets and season with salt and pepper
  • Once coals have ashed over, place filets on grill over direct heat and allow to cook for 2-3 minutes untouched
  • Turn filets 90 degrees to create cross hatch grill marks and continue to grill for an additional 2-3 minutes
  • Flip steaks over and continue grilling to your desired preference, rotating once to create cross grill marks: 3-5 minutes for medium rare, 5-7 minutes for medium, 8-10 for medium well
  • Once filets have reached desired doneness, remove from grill and place on a cutting board
  • Cover filets with aluminum foil, and allow to rest for 5 minutes to absorb juices
